Chef Francis Pascal's journey to building Vendador began far from Chicago's fine dining scene. Having immigrated from Albania as a child through the visa lottery, he grew up understanding the value of discipline, hard work, and seizing opportunity. When he entered the culinary world, he started at the bottom of restaurant kitchens and worked his way up through sheer determination and relentless focus on craft.

His culinary foundation was built within The Alinea Group, where he trained as a sous chef and helped launch high-profile restaurants like Momotaro. Working in these Michelin-level kitchens taught him not just technique, but the operational precision required to deliver excellence consistently. These skills became the backbone of Vendador's systems.

What sets Francis apart as a mentor isn't just his culinary pedigree, but his business acumen. As a member of Entrepreneurs' Organization (EO), he's part of a global network of business leaders focused on accountability, education, and growth. Through his weekly EO pod meetings with fellow entrepreneurs, he continuously refines his understanding of what it takes to build and scale a profitable operation.
