private dining in Harbor Country

For when your gathering deserve more than catering.

Harbor Country is Chicago's Hamptons. The comparison gets made constantly and it holds — not because the two places look alike, but because the dynamic is identical. Wealthy Chicagoans have been crossing the Indiana border into southwest Michigan for generations, buying up lakefront property in New Buffalo, Lakeside, Union Pier, and Grand Beach, and building the kind of second homes that become the center of gravity for an entire family's summers. The difference is that Harbor Country has never needed to announce itself. The estates here are private, the beaches are quieter, and the people who own property here tend to prefer it that way.

For generous leaders balancing demanding careers with meaningful relationships, we bring a complete Michelin-trained dining ecosystem directly to your home. Our private dining services include personalized menu curation, complete restaurant infrastructure, and NDA-protected staff — so you reclaim time and stay fully present without lifting a finger. For those who take their cellar seriously, our sommelier services extend to wine pairings, cellar curation, and bespoke beverage programs tailored to your collection and your guests. This is private dining in Harbor Country the way it should be: effortless, exceptional, and entirely yours.

From intimate lakefront dinners in Lakeside and Union Pier to grand summer estate celebrations in Grand Beach and New Buffalo, we offer private dining, sommelier-led wine service, licensed craft bar programs, and canapé service — a complete culinary experience that arrives at your door and disappears without a trace.

What Sets Us Apart for catering in Harbor Country.

MICHELIN-TRAINED PEDIGREE

Chef Francis Pascal trained in some of Chicago's most celebrated kitchens: Japonais by Morimoto, Momotaro, and Roister of The Alinea Group. That foundation of elite technique and exacting standards travels with us to every table we set in Harbor Country.

A COMPLETE FINE DINING ECOSYSTEM

We don't arrive with trays and chafing dishes. Vendador brings an entire restaurant brigade to your home — Michelin-trained chefs, sommeliers, mixologists, servers, and every piece of plateware, glassware, and linen your table requires. Nothing is missing. Nothing is left behind.

NDA-PROTECTED DISCRETION

Harbor Country's most cherished gatherings thrive on privacy, and so do we. Every member of our team operates under a non-disclosure agreement, so your guests, your conversations, and your home remain exactly that — yours.

FARM-TO-TABLE SOURCING

Chef Francis grew up in Albania with direct relationships to the people growing his food. That same philosophy drives Vendador today. We source from trusted farms and purveyors whose ingredients grace the menus of the country's top Michelin-starred restaurants.

BUILT FOR YOUR TABLE, NOT THE MASSES

Vendador is a boutique operation by design. We do not run multiple events simultaneously or hand your evening to a junior team. When you book Vendador, you get Vendador, fully present, fully committed, from the first course to the final mignardise.

“First, wow. Second - every summer, our family flies in and gathers at our home on Lake Michigan for an end-of-summer reunion. For years, I handled everything myself, the cooking, the cleanup, making sure we had enough wine glasses and drinks, not because I love hosting but because it’s just my home and that’s how it goes! This year, I finally decided I’d prefer to just spend time with my family and not worry about all the effort it takes to host. A friend recommended Vendador and the rest is history!

Chef Francis and his team traveled to our home in Michigan and executed an unforgettable six-course dinner inspired by our family’s Swedish and polish heritage for 56 guests. Canapés, cocktails, the whole experience. Every course was better than the last. The food was extraordinary, the service was a joy, and my kitchen was spotless by the end of dessert. I don’t know HOW they did it but everyone was blown away.

I have hosted this reunion for over a decade with my sister. This was the best one we have ever had. Vendador will be back next summer, and every summer after that. If you have never worked with them, you’re in for a real treat. Thank you Chef Francis and the Vendador team!!.”

why we love cooking in harbor country

Harbor Country runs on a different clock. The week's pace drops the moment you cross into Michigan, and the people who own homes here have built their weekends around that shift deliberately. They come to exhale. They open the house, call the people they actually want to see, and build the weekend around meals and water and time that doesn't have anywhere to be.

The homes here reflect that intention. Architect-designed lakefront retreats with walls of glass facing the water. Historic cottages in Lakeside that have hosted the same families for forty years. Grand Beach estates with private beach frontage and kitchens built for serious cooking. These are homes people invested in because they wanted weekends that felt like a different life — and they entertain accordingly.

Vendador has had the privilege of serving Harbor Country's most meaningful occasions. Friday evening dinners on lakefront decks as the sun sets over Lake Michigan. Summer birthday celebrations in Grand Beach estates where the guest list reads like a Chicago reunion. Long Saturday tasting menus where nobody checked the time. Corporate retreats where the lake house setting accomplished in one evening what months of meetings could not. And quiet Sunday dinners for the people who stayed one more night because nobody was ready to leave.

These are not events. They are the weekends Harbor Country families plan their entire summers around. And we are honored to be the ones in the kitchen when they happen.
