My team arrives early. We bring everything: cooking equipment, plateware, glassware, silverware, linen napkins, and the professional service staff who carry the rhythm of the meal with personality, humor, and passion. You do not lift a finger. You greet your guests with a drink in your hand.

Then the food begins to move. For most dinner parties I recommend a seasonal tasting menu of five to twelve plated courses, each one set down in front of your guests at the table. You stay seated. You hear the small gasp when the plate lands. You watch your friends taste something they will talk about for months, and you are right there to see their faces. That is the whole point. The conversation never breaks because the host never disappears into the kitchen.
